All of us need inspiration and motivation to help spice up our minds with new and creative ideas to healthfully feed our minds and bodies. Implement these 2 delicious recipes and nurture your body with healthy fats, protein, fiber, and loads of essential vitamins and minerals. Enjoy!
Energy Boosting Granola Bites - No Bake
½ c. oatmeal
½ c. quinoa flakes
⅔ c. toasted coconut flakes (unsweetened)
½ c. peanut butter or any nut butter of your cholice
½ c. ground flax seeds
¼ c. chocolate chips (otional, omit for dairy free and processed sugar free)
¼ c. cacao nibs (use ½ c. if omitting the chocolate chips)
⅓ c. honey
1 T. chia seeds (optional)
1 T. hemp seeds (optional)
Directions: Mix all ingredients thoroughly. Roll into balls and chill. Keep in airtight container in fridge or freezer. Makes 20-25
Tip: If you do not have quinoa flakes just double the oatmeal (1 c. oatmeal instead of ½ c.). You may want to put oatmeal in a food processor on low to break down into smaller pieces. This gives your final product a more smooth, less course, texture.
Cinnamon Apple Smoothie
1 organic granny smith apple (or apple of your choice), seeds removed, cut into chunks
1 cup organic spinach
1 cup coconut milk, almond milk, milk, or any nut milk, coconut water, or water (use a combination, or just one, this is a personal choice)
½ t. Cinnamon
1 T. almond butter (or any nut butter) - optional
5-6 ice cubes
Directions: Use a high powered blender to thoroughly blend and liquify all ingredients. Enjoy!
Notes:
*I always use organic full fat coconut milk in a 14 oz. can. Trader Joe’s brand, in my opinion, is by far the best tasting, and the least expensive.
*I also prefer to use Trader Joe’s raw almond butter, the only ingredient is raw almonds! No hidden added sugars or oils!!
