Almond Flour Blueberry Muffins
Gluten Free/Dairy Free//Refined Sugar Free Blueberry Muffins recipe made flourless with protein packed almond flour. Just 9-Ingredients! This blueberry muffin is easy to make, moist, and with the perfect touch of sweetness.
You can whip these delicious treats up in just a few minutes. Combine all of the ingredients together, then stir in your blueberries, and pop them into the oven.
Note: If you take the time to beat your eggs before adding them to the rest of your ingredients it will allow the muffins to rise a little more and give them a "fluffier" texture.
Bake @ 350 degrees for 20 min. or til done
Makes about 9 Muffins
Ingredients
• 3 cups blanched almond flour
• 3 eggs (Beat before adding)
• 1/3 cup raw honey
• 3/4t. teaspoon baking soda
• 1/2 teaspoon sea salt
2 t. cinnamon
• 2 t. pure vanilla extract
• 3 Tablespoons coconut oil
• 1 1/2 cup blueberries, raspberries, diced apples, strawberries
I love this recipe because it is so versatile in what you can put in it for your fruit. Literally any fruit I've tried has been delicious. I eat one of these every morning as I begin my day, usually with a cup of tea. Followed a little while later with my morning protein shake. The combo keeps me filled and nourished till lunch time.
