Black Bean Brownie Recipe
/Black Bean Brownies
Ingredients:
1 c. dark chocolate chips
1/2 c. cacao nibs
1 can chickpeas, drained and rinsed
1 can black beans, drained and rinsed
4 eggs
2/3 c. raw organic honey or pure maple syrup (or a combination of the 2)
1/2 t. baking soda
1/4 c. chopped walnuts
Shredded Coconut
Instructions:
Place chips, cacao nibs (nibs will not melt completely), saving out a handful, in a heat-resistant bowl on top of a boiling pot of water until melted.
In blender or food processor, combine beans and eggs.
Add sweetener, baking powder and melted chips, process until smooth. Stir in your reserved handful of chocolate chips and cacao nibs, and 1/2 of the walnuts into your batter.
Pour batter into a 9” nonstick pan or into lined mini cupcake trays and sprinkle with coconut and remaining walnuts.
Bake at 350 degrees. 9” pan for 40-45min. Mini Cupcakes for 11-13 min.
Allow to cool and serve.
These freeze really well, and are a great “go to” snack when that “I need something sweet” attack hits!
They are surprisingly delicious, and nobody will be able to guess that they are made from beans.
