Granola Energy Bites

Ingredients:

1 c. rolled oats (GF if desired), slightly processed in food processor or blender

1 1/2 c. quinoa flakes

1/2 c. nuts roughly chopped

1/4 c.- 1/3c. raw honey or maple syrup (or a combination) to taste

1 t. vanilla extract

1/4 c. coconut oil (or butter)

1/4 t. sea salt (or more to taste)

3/4 c. total of extra mix-ins. (cacao nibs, dried fruit, coconut, etc.)

1/4 c. almond butter (or any nut butter)

Directions:

  1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.

  2. Place the oats, quinoa, nuts and coconut (if using) on parchment paper, mix well, and bake for 8-10 min, until lightly toasted. (You can also use your broiler to speed up the process, but watch carefully, as it so quickly can go from toasted to burnt!)

  3. While that is toasting, combine the honey, coconut oil, and almond butter in a small saucepan and cook over medium heat until everything melts together. When ready, stir in vanilla and salt. Pour this mixture over the nut and oat mixture, and stir well until all are evenly coated. (If it seems a little dry, add in a little extra almond butter and or coconut oil to reach desired consistency.) Add your extra add ins, and stir to combine.

  4. Allow the mixture to cool completely. To speed up this process, place in refrigerator. When cooled, roll into 1” bite size balls. (Recipe makes approx 40 granola bites) and refrigerate til cold (approx 1 hour, or place in freezer to speed up process)

For Dipping Chocolate:

2 oz. unsweetened baking chocolate

2 1/2 T. coconut oil

2. T raw honey

Instructions:

  1. Combine all ingredients in the bowl of a double boiler.

  2. Heat over medium heat until ingredients are melted

  3. Stir to combine, remove from heat, and allow to cool.

When both bites and chocolate are cooled:

  1. Dip each bite halfway into chocolate mixture (or all the way to cover completely, that is a personal preference)

  2. Place each bite onto a parchment lined cookie sheet, and allow chocolate to set.

  3. Place bites in air tight container and place in fridge or freezer. These freeze well.
