Sweet & Tangy Coleslaw

This recipe has become a go to for a quick, tasty, slaw. I love the combination of cabbage and apple mixed with the sweet and tangy mixture of vinegar, dijon mustard and honey in the dressing. This pairs great with pork and fish dishes.

Sweet and Tangy Coleslaw

Ingredients:

5 cups thinly sliced green cabbage

1 c. finely sliced red cabbage

½ c. grated carrots

1 green apple diced small

4 green onions, sliced small (whites and greens)

Mix above ingredients together in medium bowl and set aside.

Dressing:

 ½ c. apple cider vinegar

¼ c. pure maple syrup or raw honey

¼ c. olive oil

2 T. dijon mustard

1 t. Dried dill weed

½ t. Fresh ground black pepper

Himalayan sea salt to taste

Combine these ingredients together in blender, food processor or  immersion blender. Pour this over cabbage mixture, Stir until all is coated evenly. 

Top with:

1-2 t. Toasted sesame seeds(optional) - do this right before serving.

Mix well, and allow to sit in the fridge for at least 30 minutes before serving.  The longer it sits, the more flavorful your slaw becomes. Store any leftovers in an airtight container for up to 3 days. Enjoy!
